An easy yet sophisticated dessert. Prunes which have been simmered with red wine, cinnamon, and sugar until they are meltingly soft and deeply flavored are served with a dollop of creme fraiche.
Any summer stone fruit—peaches, nectarines, plums, apricots, pluots—works in these easy, free-form tarts (called galettes in France). Feel free to experiment with combinations of fruit.
