A jar of slow-roasted tomatoes in the fridge is an excellent excuse for simple fare that needs one crowning ingredient. Add them to a bowl of pasta, salad or sandwich.
My favorite bright, fresh, tangy & sweet marinara sauce with fresh herbs. Serve with spaghetti or use in lots of other Italian recipes. Pass the Parmesan!
