When we think of “vegetable chips,” we usually think of those crispy, crunchy fried things that are shaped like potato chips, but made from other things. They are different colors made to represent whatever vegetable they are (green! pink! purple), but they certainly don’t look anything like a vegetable.

We don’t think of those anymore.

Now, these Vegetable Chips may not necessarily be an innovative, new product, but it’s the first time we’ve ever seen, smelled or tasted real vegetable chips, shaped like real vegetables. We were particularly struck by the green beans.

We bought a bag of these at the Farmers’ Market, but it was only after we got home and inhaled the entire bag in 5 minutes did we realize how expensive they are ($8.99 for this entire smallish bowl!). So we jumped onto our site hoping to find a recipe.

“Hoping.” Please. This is TasteSpotting. Aside from the dozens of Kale Chip recipes alone, look what we found! We found quite a few recipe for everything from Artichoke Chips to Zucchini. What a beautiful post with such incredible pictures. I love making vegetable chips…my favorite are beets and sweet potatoes then dipping them into guacamole or hummus. Your blog, recipes and photographs are absolutely stunning and you truly do a beautiful job.

Wow look at those lotus chips – so pretty! Wonder what they taste like. And, where you’d find lotus root. I love the vegetable chip trend. Happy hour seems so much more healthy!
