Chicken Tacos from Flying Pig
Food trucks are a movement (quite literally?) in LA that spans every dimension of food.

And when we say “every dimension,” we mean every dimension of time and space…

…whether it’s time of day — Monsieur Egg for breakfast or Munchie Machine for an afternoon snack — course in a meal — De La Abuelitas for Antojitos or Sweet Lucie’s for Dessert — type of restaurant — from underground Starry Kitchen to pop-up LudoBites to established restaurant Border Grill — or any ethnic street cuisine from around the world. But as wide as the food truck landscape may span, and as fancy as some of the foods may get, we’ll never forget that mobile street food in LA all started with the taco truck, which is probably why the most prevalent type of food served from a truck is still the taco. Sure, this new breed of tacos is no longer made with traditional Mexican fillings like carne asada or carnitas, but they’re still a tortilla filled with something.

In the case of the Flying Pig Truck, those fillings are mostly Asian-inspired like Tamarind Duck, Crispy Tofu, Carnitas flavored with Thai Red Curry. Smoked Chicken is one of their signature tacos that they’ve shared with those of us who don’t live within GPS-tracking distance of their truck, or can’t make the original LA Street Food Fest’s Summer Tasting, where they’ll be serving these tacos up.

Flying Pig Truck - Smoked Chicken Taco

Smoked Chicken Tacos from The Flying Pig Truck

Ingredients:

for smoked chicken:

2-3 lbs boneless, skinless chicken thighs
1 cup mesquite wood chips
3-4 cup braising liquid

for chicken braising liquid:

1 cup soy sauce
¼ cup brown sugar
3 scallion
1 oz ginger
1 oz garlic
1 oz lemongrass
1 oz cilantro
¼ cup rice vinegar
¼ cup mirin
1 oz sesame oil
1 cup orange juice
3 cup veg stock for braising liquid

Directions:

Salt and pepper chicken thigh meat. Brown on all sides. Place in smoker with mesquite and smoke for 20 minutes. Transfer meat to pot with braising liquid. Bring to simmer and let braise for 45 minutes or until tender.

Add smoked chicken to tortillas and top with green curry and mango napa cabbage slaw.

Green Curry Accompaniment for Smoked Chicken Tacos:

Ingredients for Green Curry:

2 cloves garlic
½ oz ginger
½ oz lemongrass
4-5 Thai chilis
2 bunches cilantro
1 egg white
16 oz canola oil
¼ cup rice wine vinegar
1 teaspoon ground cumin
2 tablespoons honey

Directions for Green Curry:

Mince garlic, ginger, lemongrass, and chilis and sauté. Add to food processor with cilantro and process until fine. Add egg white and process until mixed. While processing, slowly add canola oil until mixture is thick and smooth. Adjust seasoning with salt, vinegar, honey, and cumin.

Mango Napa Cabbage Slaw Accompaniment for Smoked Chicken Tacos:

Mango Napa Cabbage Slaw Ingredients:

1 head napa cabbage, chiffonade
2 carrots
2 green mangos
1 oz garlic
1 oz ginger
1 oz mint
1 oz basil
1 oz cilantro
¼ cup ground honey roasted peanuts
sugar to taste
salt to taste
