Salad as a Meal by Patricia Wells Cookbook
Because May is Salad Month, it seems appropriate to give away a copy of Salad as a Meal

Salad as a Meal is cookbook that came out last year from long-time author Patricia Wells (we kind of love her and have many, many of her French cookbooks on our shelf), and yes, we did indeed give a copy away last year, too (sorry, no Le Creuset this time). We just happen to have gotten our fresh little hands on another copy and want someone else to make things like a side green salad.

Just kidding. Who writes recipes for a side of greens?! And the title of the book is Salad as a Meal.

This book has gorgeous recipes like Halibut Cheeks with Polenta and Parmesan Crust and Asian Greens, How to Smoke Mackerel, Smoked Chicken Breast with Sorrel Chiffonade and Parmesan Croutons, and Pork an Spinach Salad with Mustard Sorbet, just to name a few. There are also recipes for soups, different pantry items like little delicious little pickled things, and for baking breads to accompany the salads.

I love a simple salad… arugula, pancetta, some fresh shavings of parmiggiano, maybe some fried mushrooms, with a balsamic dressing made with the pancetta drippings. Delish!

I am a salad addict – I eat one twice a day in lots of varieties. Right now, my favorite is spring mix topped with sliced red onion, cucumbers, diced roasted beets, toasted walnuts, and a basic french mustard vinaigrette – it is oh so satisfying!

Any “leaves” that are in season mixed with beets, Israeli Cous-Cous (or quinoa!) served with chèvre, and varied with nuts and other roasted veggies. As far as dressing is concerned, I love using a simple lemon juice + olive oil mix!

A Thai dish called “Yum Bla Duk Foo” or, literally, “fluffy catfish salad.” It involves shredded sour mango. Also the Thai “Som Tam,” which is a sour green papaya dish.

I recently discovered that wheat doens’t agree with me, so salads have become a huge meal staple! Oddly enough, even though I’ve tried tons of intricate salads, my favorite still remains a very simple recipe. I have DREAMS about the arugula salad with shaved parmesan ribbons, avocado cubes, and light lemony vinaigrette that I once had at a place called Casa Italia back home in PR! Amazing!

My friend’s husband is from Turkey. He made the best tuna salad ever: fried rice (then cooked), tuna, grated cucumber, grated radish, fried mushrooms with onion. Salad is served with mayonnaise, chilli flakes and lots of black pepper. Taste incredible!

I make a salad for lunch very often at work. My favorite ingredients together are mixed field greens, grape tomatoes, button mushrooms, green bell pepper, strawberries, mandarin orange slices, purple grapes, blueberries, sunflower seeds, feta crumbles and either balsamic vinaigrette or raspberry vinaigrette. My ideal salad usually has both fruit and cheese in it…. like a spinach, goat cheese, and strawberry salad with walnuts and a raspberry-balsamic vinaigrette! On the heartier side, when I lived in France I would eat “salade vosgienne”, which had potatoes, hard-boiled eggs, and bacon in it! YUM.

Salad that hits different tastes – sweet, savory, sour, salty – seem to make for the best salad as a meal since you get a bit of everything. Chicken salad with grapes, nuts, and herbs. Field greens with cranberries, soft cheese, salmon and vinaigrette.

Ooh, too tough to just pick one! I love Thai salads, anything with plenty of lime and a good kick. However, I also love traditional salads, such as Niçoise or a Greek with plenty of Feta. Finally, any salad which has avocado in it definitely gets my attention!

So hard….too many favs.

We make a tuna pasta salad with chopped olives that is outstanding. I love chicken salad with poppy seeds, grapes, pecans. Dessert salads like pretzel salad, and frog-eye salad LOL, Watergate salad, fresh fruit salad with homemade poppyseed dressing (so good ya wanna just ear it with a spoon).

My fav full meal kind of salad is a Black & Blue Salad! Blackened filet of beef strips, crisp romaine, bleu cheese, bacon, and an awesome Balsamic vinaigrette.

Oddly enough, it’s a lettuce-less salad! A simple combination of grilled chicken breast, cooked beets, fresh tomatoes, crisp cucumber, and creamy avocado–all cut in same-size pieces (about 3/4 inch each side) and dressed simply with olive oil and lemon juice. So refreshing and very addictive.
