Peach Arugula Feta Salad
Why is National Salad Month during the month of May when it’s right now that all the markets are exploding with super bright, lush, crisp produce? When it’s right now that it’s so hot I don’t want to turn on anything in the kitchen except the sink to run some water? When it’s right now that I’m feeling so lazy that I don’t want to go to any fuss at all for dinner?

It’s something we’ll ponder while we eat this gorgeous salad of nothing more than super sweet peaches, spicy arugula, and salty feta, drizzled with a vinaigrette made from the same peaches and some fresh thyme.

Peach Arugula Feta Salad {recipe}

This is really just a little set of guidelines built around peaches because they were practically tumbling all over each other and into my basket at the market. Arugula can be switched out for a different green (even something herbal like basil or mint) and the feta can be switched out for some other strong, salty cheese. Just keep all of it — sweet, salty and spicy — balanced.

serves 4


2 large very ripe peaches
4 handfuls arugula
very thinly sliced shallots or red onions (I didn’t add this until I thought of it after I took the picture!)
Peach Thyme Vinaigrette
optional: shredded basil, mint or fresh thyme leaves


Wash peaches, then cut into small, bite size pieces. You can peel them, too, but I left the skins on because it’s August and it’s hot and I’m lazy.

Place the arugula, peaches, shallots and feta in 4 shallow bowls or on plates.

Drizzle with Peach Vinaigrette.
