It’s Mardi Gras. Or Carnival. Or Shrove Tuesday.

Whatever you choose to call the last hurrah before we hunker down for a bit before the spring and Easter celebrations is fine with us, but we’re food people so obviously, we’re going with Pancake Day. (Fat Tuesday works here, too, but hey, let’s not get too personal.)

It happens that Pancake Day happens on Taco Tuesday every year. Pancakes for breakfast. Breakfast tacos. HOW DID WE MISS THIS OPPORTUNITY EVERY YEAR OUR ENTIRE LIVES UNTIL TODAY?! We don’t know either, but now we do know.

We made our pancakes gluten-free, you make them however your little heart desires. We pulled some great pancakes recipes from TasteSpotting for you down below. One recommendation, make lighter, “thinner” pancakes as opposed to fluffy, tender buttermilk-type pancakes, as the thinner pancakes are easier to fold into tacos without breaking.

makes 12 tacos, serves 4–6 people


12 6-inch diameter pancakes
1½ cups cooked black beans (1 can)
12 eggs, scrambled in neutral cooking oil, with salt and pepper to taste
12 slices bacon, cooked or shiitake mushroom “bacon” for vegetarian
1 avocado, thinly sliced
additional taco “toppings”: queso fresco or other cheese, chopped fresh cilantro, sliced fresh jalapeño, thinly sliced onions, pickled red onions
serve with: salsa


For each Taco: Lay a pancake flat on a work surface. Spoon 2 tablespoons warm black beans in center of pancake. Top with 2 tablespoons scrambled eggs (roughly equivalent to 1 egg), 1 slice of cooked bacon, 2 to 3 sliced of avocado, and any additional toppings.

Gently fold the pancake in half into a taco. Place on serving platter, using cut limes or avocado halves as “bookends” to hold the tacos in place.

Serve with additional toppings and salsa.

Alternate Serving Suggestion: Make a “taco bar” by place each of prepared ingredients in separate bowls or plates. Allow each person to assemble his or her own tacos.

Each of the prepared ingredients except for avocado will keep in the refrigerator in a tightly sealed container for up to 2 days. Completely assembled tacos, especially with avocado or salsa, do not keep well.

  • PANCAKES: We used Bob’s Red Mill 1-to-1 gluten-free baking flour to make gluten-free pancakes using any recipe for pancakes, just substituting the gluten-free flour 1:1 for regular flour in the recipe. Use your own favorite recipe, or any of the recipes listed below, which we pulled as our favorites from
  • BLACK BEANS: We buy dried Rancho Gordo beans, soak them overnight, and cook them in large batches. We have also used Eden Organic Black Beans; 1 16-ounce can is roughly 1½ cup of beans, perfect for this recipe.
  • EGGS: We eat omega-3 fortified cage-free eggs.
  • BACON: We made half of our tacos with regular pork bacon and the other half with shiitake mushroom “bacon” using this recipe to marinate bacon with tamari, then roast.
  • AVOCADO: From JJ’s Lone Daughter Ranch in southern California, available at the Santa Monica Farmers’ Markets on Wednesdays and Saturdays, and Hollywood Farmers market on Sundays.
  • All other produce from either the Santa Monica Farmers’ Market or Whole Foods Market.
  • GLUTEN-FREE: If you make gluten-free pancakes, this recipe is gluten-free. If you make regular wheat flour pancakes, this recipe is not gluten free.
