Now Eat…What?
Rocco doesn’t need any introduction, though this cookbook might need some explanation. It’s called Now Eat This!, because the 150 recipes in the book, Rocco’s riffs on typically fatty, heavily-caloric American comfort foods, are versions you should eat now. Now, eat this skinny Rocco version instead of that fatty fat original plate of nachos, French fries, pizza, burgers, macaroni and cheese, Chinese take-out stir fry, and lasagna.
Now, we’re not going to say that we necessarily endorse this book, as some of the recipes call for ingredients like sugar substitutes and low- or non-fat dairy products. We tend to lean more toward the “if you should stay away from a certain food like, say, Oozing Cheese-Filled Deep Fried Jalapeno Poppers, just stay away from it. (For a while, at least.)”
But that’s just us. And that’s just some of the 150 recipes in the book.
Other recipes actually make clever substitutions with other food products that are either lighter, like cauliflower as a stand-in for Mashed Potatoes, or that are nutritionally more dense than the original so their health benefits outweigh things like fat or calories. For example, Rocco uses yogurt instead of mayo, a much tastier substitution than lowfat or, God forbid, nonfat mayo.
Super Bowl Sunday is next weekend, and this cookbook couldn’t be more appropriate, since so many of what we call “game day foods” are typical American comfort foods. You want this book so you can have version of Fried Onions Rings, Buffalo Chicken, Fried Calamari and Hot Spinach Artichoke Dip that are all under 350 calories instead of hiding in the corner of the party room by your sad self with a carrot stick.

A dip my mother makes: copious amounts of cream cheese, chili with beans, and Sharp cheese on top, with chips. So filling I used to eat it for dinner!

Famous Contaldi recipe at our house is Peanut Butter Captain Crunch Chicken. It has a crazy mix of sweet and crunch! All you have to do is prepare normal breaded-fried chicken cutlets, and instead of bread crumbs, smash up some peanut butter captain crunch and roll the chicken strips in it!

For something a little bit lighter – broccoli dip with veggie chips! So delicious and healthy (though it doesn’t taste it!). It’s just brocooli, salt and pepper, a little ricotta and blend!

nah, y’all got it wrong. At the Periwinkle Farm annual fourth of July party (in Carrboro NC) I made miniature chili relleno poppers. They never made it to the table, and by the way it might be one of the best pot-lucks around (not to mention fire-works). Whip the egg whites to peaks, then add the yolks! Too busy cookin’ to watch football anyway.

I am not actually into sports that much, but I love cooking for any theme. So I’d have to say, half the fun for me is coordinating typically “manly” foods and the colours of the teams playing. The blue in the Steeler’s logo definitely calls for blue cheese dip or burgers!
