lunch - eggplant sandwich- the one with the good one

I've put a * next to the ingredients you can be a lot more generous with.

Mash 5 squares of firm beancurd* , and drain of all water as much as you can. Refrigerate
Grill 1 zucchini* with italian herbs, 2 red and 2 green capsicums*
Blend 5 small yellow potatoes, 4 carrots, 1 cup of field or button mushrooms, 4 large onions
Lightly fry all vegetables with NO oil.
Mix in thyme* , italian herbs* , coriander, cumin, rosemary, paprika* , basil, pepper, tarragon

OPTIONAL:
Grind cereal with a pestle & mortar. I used Post's Great Grains, but I removed the raisins at the end. You can leave them in if you like.

(Occupational hazard: I couldn't resist pausing to eat a bowl of the cereal with milk.. love it!)

This provides opportunities for unexpected sweetness in the burger, which isn't overwhelming. Experiment with other cereals!

Shape into a burger, lightly dab with egg, and dredge with the crushed cereal.

Cling wrap and refrigerate for 30 mins or more

Shallow fry in olive oil (with or without cereal crumbs; this was made without)

Serve with mayo dressing: Mix Japanese or low-fat mayonnaise with plenty of lemon pepper, tarragon and italian herbs. Sprinkle a little chilli powder in for a good kick.
